A leader in culinary education since 2007

The FBI Chef School and Patisserie Academy was formed in 2007 by chefs Nicolas D van der Walt and Lesley Jacobs.  Specialising in training chefs of outstanding quality who possess not only knowledge, but understanding of the specific skills required by chefs in the hospitality industry.

With specially crafted City & Guilds-approved outcomes in sugar and chocolate craft, hot kitchen, baking and other programmes ranging from basic to advanced, the FBI is the acknowledged leader in chef’s training in South Africa.  Students who have successfully completed our programs go on to work and – even run – at world-renowned kitchens in all corners of the globe from Miami to Mauritius, and many have even founded their own restaurants.

Our students come from all walks of life, one came even as far away as Paris, and from a diversity of backgrounds: we train over a dozen government sponsored National Youth Chefs Training Program  students every year.  And even more amazingly, all ages.  We have an annual Grade 11 baking competition open to students aged 15-16, which has now grown to over 40 teams competing for amazing prizes, but also the coveted title. Our 2018 student of the year is a pharmacist, a mother of two aged.. well, let’s just call it call it 50 plus tax. You are never too young, nor too old to follow your culinary dreams.  Everyone is welcome at the FBI.

The FBI not only simulates real-life catering and requirements, but provides students to the opportunity to work in real-world culinary skills, ranging from wedding cakes to mass catering to presentation workshops to guest requirements.  This integrated process allows us to pride ourselves in going beyond merely giving students the necessary practical skills, but also the needed social skills like teamwork, self-discipline, and above all, pride, in order to make a success out of this sought after career.

And… we have lots of fun while doing it!

The Food and Beverage Institute does not only specialise in sugar and chocolate craft but also teaches full culinary programs resulting in well-balanced all-around chefs. It is here where aspiring chefs have the opportunity to train in this time-honoured culinary art at an internationally accredited institution under highly qualified, exceptionally experienced internationally acclaimed chefs.

Our Venue

Our 70 seater venue caters for teambuilding events, special events, chef’s tables, as well as conferencing and baby showers.  Fully equipped demonstration kitchen in the venue.

Live cooking, painting, or even art demonstrations can be facilitated with state of the art overhead cameras and screen.

The venue as a stand-alone can also be hired for private events. Enjoy the relaxing atmosphere by the swimming pool and special FBI attention to detail.
